I made this chocolate cake for my Birthday and it was delicious. The cake itself was nice and moist! This cake recipe is perfect for Birthdays and the method is simple to follow.
Ingredients:
For cake mixture:
350g of castor sugar
225g of plain flour
85g of cocoa powder
1 1/2 teaspoon of bicarbonate soda
1 1/2 teaspoon baking powder
250ml of milk
2 eggs (used free-range eggs)
125ml of vegetable oil
250ml of boiling water
2 teaspoon of vanilla extract
For the chocolate icing:
200ml of double cream
200g of chocolate (used a mixture of dark and milk chocolate)
For the decoration (optional):
100s & 1000s sprinkles
Chocolate chips
Smarties
Method:
1. Preheat the oven to 180 degrees or 160 degrees Fan. Slightly butter the sides of the tin and place grease proof baking paper into the baking tray.
2. Add all the ingredients for the cake mixture into a mixing bowl, except boiling water. Mix all the ingredients with a wooden spoon or electric whisk. Ensure the mixture is smooth and mixed well.
3. Slowly add the boiling water to the mixing bowl. Add a little bit at a time. Ensure everything is smooth and mixed well. Also, the cake mixture should be very liquid so be careful when pouring it in the baking tray.
4. Then pour the mixture into the baking tray/tin. Place in the oven for about 30 to 40 minutes. When you take it out the oven, make sure the top is firm and insert a thin knife into the middle of the cake ensuring that it comes out clean.
5. Take out the cake from the oven and allow it to cool down completely in it’s baking tray because, once the cake is cooled down you can then apply the chocolate icing.
6. For the chocolate icing, break apart chocolate bars into small pieces. I used chocolate Easter eggs, as shown below. Heat the chocolate and double cream in a saucepan over a low heat. Wait for the chocolate to completely melt and then remove the pan from the heat. Ensure the mixture is smooth and glossy (shiny). Leave the chocolate mixture to cool down fully for about 1 to 2 hours. Make sure it is thick enough to spread all over the cake.
7. After the cake is cool down, carefully remove it out from the baking tray and place it on a plate. Use a round smooth knife to spread the chocolate icing onto the cake. Spread the chocolate on the top and edges of the cake, as shown below.
8. This is optional, sprinkle some 100s & 1000s sprinkles on top of the cake and place some smarties around the edge of the cake. Get creative with the decorations.
